2 min slow, 6 min fast with spiral mixer – add oil during the last minute of mixing.

Scaling:
Place 5kg dough into dusted baking tray, 75cm x 45cm. Dust with lots of flour on top, press flat and cut as shown in diagram (Ciabatta Cutter), then place onto baking tray.
Proofing:
± 20 minutes.
Baking:
240°C for 30 minutes with steam.
